These are so simple to make, they cook quickly, stay lovely and moist AND they are healthy! A delicious chocolatey treat that no one needs to feel guilty about eating. I don’t know about you but I love making treats that have hidden vegetables in them, especially when they taste so good.
- 1 cup sweet potato – cooked and mashed
- 1/4 cup maple syrup
- 1/4 cup cocao powder
- 1/2 cup nut butter
- Preheat oven to 175 Celsius
- Combine all ingredients until smooth
- Place into a small loaf tin or divide evenly into a muffin tin (makes around 8 small muffins)
- Cook for 12-15 minutes
Serve whilst warm for a lovely gooey treat. These can be kept in an airtight container in the fridge for up to 5 days.
Don’t be worried when these stay quiet soft – they are cooked and will harden up a little if you pop them in the fridge.
