Egg Fried Cauli Rice with Prawns

I’m going to be completely honest with you. I HATE cauliflower! So it’s taken me a very long time to try anything that uses cauli rice, but it’s actually not that bad. If you add the right flavours you really don’t taste it at all, and cauli rice is a great way to eat and feel full without the calories or bloating that standard rice can cause.


  • 1.5 cups cauli rice
  • 1 cup diced bell pepper
  • 1/2 cup peas
  • 2 eggs, lightly beaten
  • 100g king prawns
  • Coconut oil for cooking


  • Heat some oil in a pan
  • Add the cauli rice to the pan, cook for 2 minutes stirring frequently
  • Add in the peppers, peas and prawns, cook for a further 5 minutes, stirring frequently
  • Add in the egg, cook for a further 2 minutes, or until the eggs are firm, stir frequently.

Serve immediately.
